This delicious lasagna recipe from Martha Stewart's Vegetables Cookbook uses garden-fresh swiss chard so you can focus on the "yes" and fill up on the good stuff.

Ingredients for Martha Stewart's Swiss Chard Lasagna

3T extra virgin olive oil

1 medium onion, chopped

1 large bunch of Swiss chard, separate the leaves and stems and slice thinly

Coarse sea salt

4 garlic cloves, minced

1/2 teaspoon red pepper flakes

1-28 oz can of whole peeled tomatoes

8 no-boil lasagna noodles (9 ounces)

1 pound shredded mozzarella

Directions for Making Martha Stewart's Swiss Chard Lasagna

Preheat your oven to 375 degrees.

Chop swiss chard and onions.

Heat a large skillet over medium high heat and add 2 tablespoons of the olive oil, onion, and swiss chard stems.

Sauté for a few minutes until soft, stirring occasionally.

Add chard leaves, season with salt, and cook for an additional 2 minutes, until the leaves are tender.

Transfer chard and onion to a plate and return pan to the heat.

Add remaining oil, garlic, and red pepper flakes.

Cook on medium high and stir continuously for about 30 seconds until fragrant.

Add the canned tomatoes with the juices.

Let simmer and break up tomatoes using a wooden spoon.

Cook for a few minutes until the sauce has thickened.

Season with salt to taste.

Boil lasagna noodles 4-6 minutes in a simmering pot

In the bottom of a square 8-inch baking dish, spread half of the tomato mixture.

Add 2 lasagna noodles, then an additional 3/4 cup of sauce, then 1/3 of the chard and onion mixture, and finally 1 cup of shredded cheese.

Repeat these layers two more times. For the final layer, top with the remaining noodles, sauce, and cheese.

Loosely cover with foil or baking top. Bake covered for 30 minutes.

Uncover and bake for an additional 15 minutes or until the cheese is bubbly and slightly browned.
